With their pale pink color, confetti-style sprinkles, and luscious raspberry flavor, these meringue kisses, might just be the perfect Mother’s Day treat! The secret ingredient is Jell-O-Mix. it gives them a cotton candy-style texture that melts in your mouth and is a tiny bit chewy at the end.
3 egg whites
1/8 tsp salt
3/4 cup sugar
3 1/2 TBS. dry raspberry Jell-O mix
1 Tbs Vinegar
Confetti Sprinkles
Preheat oven to 250. Line baking sheet with parchment paper. Beat 3 egg whites with 1/8 tsp. salt until foamy. Add 3/4 cup sugar and 3 1/2 Tbs. dry raspberry Jell-O as you beat mixture: continue to beat until stiff peaks form. Gently mix in 1 TBS. vinegar. Spoon into 1 1/2 rounds on baking sheet. Sprinkle with confetti sprinkles. Bake 25 minutes: turn off oven. Lean in oven for an additional 20 minutes. Remove from oven cool completely. Makes about 44
